Antioxidant rich, hydrating green tea cucumber lemon and mint cooler
Staying hydrated is critical to your overall health, and in the summer months nothing feels (or tastes) as good as a tall glass of water …except, maybe, for this green tea cucumber mint lemonade.
Made with green tea , lemon, cucumber, mint and a touch of honey - this “cooler” isn’t just delicious and ultra hydrating - it’s also incredibly good for you.
Here’s what I love about it -
Green tea is loaded with antioxidants, which help to prevent aging, cell damage, and diseases such as Alzheimer's, Parkinson's, and a variety of cancers. Green tea also contains the amino acid L-theanine and caffeine, and this combination promotes brain function and energy.
Lemon juice contains vitamin C, it also contains acid that helps breakdown food and aid in digestion.
Cucumbers are also loaded with antioxidants, and contain a number of important vitamins and minerals. They’re also incredibly hydrating.
Honey is antibacterial and anti-fungal - both of which can boost immune function and help you fight common illnesses.
Mint leaves are rich in nutrients, antibacterial, anti-inflammatory, and can be effective in healing stomach issues such as indigestion or irritable bowel syndrome.
I mean, it really packs a healthy punch.

Hydrating Green Tea Cucumber Lemon and Mint Cooler
Prep time: 2-4 hours | Cook time: 2 minutes | Yields: 2 servings
Ingredients:
2 green tea bags
6 cups of water
2 lemons, juiced
1/4 whole english cucumber, peeled and seeded
1 tsp honey (or a few drops of liquid stevia, as a sugar-free option)
Handful of fresh mint leaves
Optional - thinly sliced lemon and fresh mint leaves for garnish
Directions
Combine tea bags and water in a large pitcher, and let steep for 2-4 hours.
Remove tea bags, and add steeped tea, lemon juice, cucumber flesh, honey and mint to a high speed blender and blend until ingredients are well combined.
Pour blended cooler back into the pitcher, over a strainer to remove chunks of cucumber and mint so the drink is completely smooth.
Pour over ice, garnish and enjoy! If you prefer your cooler to be extra sweet, add a few drops of liquid stevia in your glass and gently stir so it’s evenly mixed.
