Easy apple, coconut and lime smoothie

A delicious winter smoothie that tastes like summer - made with apple, coconut and lime.

One thing I’ve really been benefitting from lately are simple, fruit-based breakfasts. 

Fruit are among the healthiest food in the world, but you’ve to go consume it at the right time and in the right way to really maximize all of the benefits, according to Ayurvedic wisdom (which I’m a big fan of).

And that’s in the  morning, on its own, on an empty stomach.

You can eat it as is, juice it, combine it with other fruits and certain raw vegetables, pair it with spices or even cook them (you can check out some of my favorite fruit-based breakfasts, here).

Being the creature of habit that I am, I’ve been on a bit of a smoothie kick since making this a few weeks ago.

I’ve been playing around with different combinations of winter fruits, but this one is special.

Made with just four super simple ingredients, this smoothie is cleansing, refreshing, sweet and freaking delicious.

Here’s the low down on it:

Healthwise…

There’s some really great benefits going on here - 

  • It’s got apples, which as you know are great for you (there’s a whole saying about it). They’re high in fiber and packed with vitamins and antioxidants (which, again, will be maximized if had in the morning on an empty stomach). They’re high in pectin, too, which makes them a great morning food since it helps cleanse the intestines .

  • Limes, despite being acidic tasting, have an alkaline effect on your body and help balance its PH level. Most diseases, illnesses and bad bacteria thrive in an over acidic environment, so YES to more alkaline foods (all the time).

  • Coconut meat is full MCTs and healthy fats and insoluble fiber (the kind that can help improve gastrointestinal issues and promote good gut health). It’s also very necessary to overall recipe (more on that shortly) so don’t skip it you guys.

A couple of helpful tips…

  • One component of this has to be frozen to get a creamier consistency. Ideally, use frozen coconut meat. If you prefer coconut water, you can try to freeze the apples (it may work, I just haven’t gone there yet!). If you want drop the coconut, sub with frozen very ripe banana. I’ve done it and it’s delicious.

  • While not necessary at all, fresh mint tastes lovely with this. I didn’t think it could get more refreshing, but wow. It does.  

  • This smoothie (and fruit in general) really is best in the morning on an empty stomach to receive a cleansing effect and help you avoid bloating or discomfort when eating fruit (as often happens when you have it too close to meals, where you might be eating grains, proteins, etc.) You can learn more about this by looking into food combining or delving into Ayurveda. I’m not an expert. I just create recipes inspired by these principles to help you feel, look, and do your best so you can enjoy life, you know?

Apple, coconut and lime smoothie

Prep Time: 2 minutes | Yields: 1 servings

Ingredients:

  • 1 apple, chopped

  • 1 lime, juice

  • 1 pckg of frozen coconut meat

  • 1 cup of filtered water

  • Optional: handful of fresh mint.

Directions

  • Combine all ingredient in a blender and puree until completely smooth.
