Five minute natural and healthy curried rice crisps
I love a natural and healthy homemade snack.
Today, I’m sharing one I’ve been making (and loving) for years - curried rice crisps. It is a staple in our house and I think it will be in yours too.
There’s a lot to love about this one, but the fact that it’s just four ingredients and comes together with minimal skill or effort and in mere minutes is definitely at the top of the list for me.

Health Perks
Ingredients are simple, recognizable and actually good for you. This is almost unheard of when buying store-bought snacks and chips. The ingredients in this one are all natural and loaded with benefits (more on those below).
Easy to digest. Thanks to curry powder, this snack is flavored with good-for-you digestive spices. There are all sorts of ways and recipes out there for making curry powder. If you can’t make your own, aim to find one that contains anti-inflammatory digestive spices such as cumin, coriander, cinnamon, ginger, turmeric, black pepper and stuff like that.
Ghee and Coconut Oil both offer their fair share of benefits too. Whether you use ghee or coconut oil is up to you and your tastes and preferences. Both, in reasonable amounts like we use here, are great for you. Coconut oil is believed to have both anti bacterial and anti inflammatory properties, and ghee is rich in important nutrients like vitamin A and omega-3 fatty acids and is believed to reduce gut inflammation and improve heart health.
Barberries are a powerhouse. Similar to dried cranberries, but with way more benefits. They have a long history as a folk remedy in Indian cultures, often used to treat digestive disorders, easing inflammation and infection in the body and cleansing the liver. The list actually goes on…and on. So if you can get your hands on some, give them a try. If not, dried cranberries will work just fine! - this meal is a digestive treat (especially for anyone who struggles in this department).
Other Thoughts, Tips and Suggestions
Dried Cranberries will do. Before I discovered barberries (thanks to my dear friend who shares my love of health foods and cooking), I used dried cranberries in this recipe and it was delicious. I like barberries for the taste and the added benefits, but if you can’t find them, dried cranberries work just as well.
Make sure your curry powder is fresh. Nothing kills a dish like stale spices - especially a whole food plant-based dish that relies on the spices and herbs it’s paired with! Be sure you’re using fresh store-bought spices, and get rid of any spice jars that are more than a year old. If you grind your own small batch spices, even better!

Curried Rice Crisps
Cook Time: 5 minutes
Ingredients:
1-2 tbsp coconut oil or ghee
1/2 tbsp curry powder
1/4 tsp mineral salt
1 and 3/4 cups brown rice crisps
Directions
Melt your oil or ghee. Place a medium frying pan over low to medium heat, and melt your ghee or coconut oil.
Add your spice. Once the ghee or oil is melted, add your curry powder and salt. Stir vigorously until the curry powder is mixed into the butter or coconut oil, and there are no clumps of spice.
Add your rice crisps. Next, pour in your rice crisps, and reduce heat to low to avoid burning. Use a spoon to stir and mix the rice crisps until the butter/oil and spice blend evenly coats your crisps. This will take a few minutes. Make sure to break down any clumps of spice as you go.
Pour in barberries. Now, mix in your barberries.
Store and enjoy. Enjoy by the spoonful. Store in an air tight container in the pantry for up to a few weeks - but it definitely won’t last that long!
