Grain-free sweet zucchini breakfast bowl
Whether you’re looking to avoid grains, or just need a change from your go-to overnight oats - this breakfast bowl is a MUST try.
Made with zucchini, superfoods like flax and chia seeds, warming spices, and a bit of fruit - it’s full of nutritious whole foods and has a ton of flavor.
What I love most about it though, is that it’s incredibly sweet but contains no added sugar at all - just a small amount of natural sugars from one banana and a date. That’s it!
While the recipe below is delicious as is, you may wish to add hemp seeds for additional protein, a pinch of nutmeg for an even deeper, aromatic flavor, or an extra chopped date for even more sweetness!

Grain-free sweet zucchini breakfast bowl
Prep Time: 5 minutes | Cook Time: 10 minutes | Yields: 2-4 servings
Ingredients:
1 cup plant-based milk
1 zucchini, finely grated
2 tbsp chia seeds
1 tbsp ground flax seeds
1 ripe banana, mashed
1/2 tsp ground cinnamon
1/2 tsp ground vanilla powder or liquid extract
2 tbsp walnuts
1 pitted date, finely chopped
Directions
Combine all ingredients, except for the date, in a medium sauce pan and place it on a low-medium heat. Stir to mix well and cook uncovered for 5-10 minutes. Stir often until ingredients are thick and evenly mixed.
Remove from stovetop; stir in chopped date. Serve warm.
Eat as is, or add additional nuts, spices or fruit as toppings.
Note: you may store in an air-tight container in the fridge for 2-3 days.
