Easy, high-protein tofu and spinach scramble
Prep Time: 5 minutes | Cook Time: 5minutes | Yields: 1 serving
Ingredients:
1/3 pckg of firm tofu, crumbled
2 tsp turmeric powder
2 heaping handful of baby spinach
2 tbsp cooked quinoa
1 tbsp plant-based cream cheese (I like Blode Kuh or Monty’s NYC as they’re both minimally processed)
Salt, to taste
Directions
Coat a non-stick medium size sauté plan with a bit of spray oil, place it on a low-medium heat, and add tofu and turmeric. Toss until tofu is coated in turmeric
Add spinach, mix well until spinach has wilted (about 2-3 minutes). Mix in cooked quinoa.
Transfer scramble to to plate, top with cashew cream cheese and salt.
Serve warm (immediately).
Notes: If you prefer melted cheese, add cheese to the pan with the tofu, spinach and quinoa at the very end and mix well until it is melted.
