Rich and savory multi-purpose miso broth in just 30 minutes
This multi purpose miso broth has quickly become a staple in my kitchen. While you can buy miso soup mix at just about any grocery store, it may be hard to find a variety that is as clean as one that you would cook up at home. This one has no oil or sugar and requires only 5 very basic ingredients…And it takes only 30 minutes to prepare!
Some of my favorite ways to enjoy it are to sip it plain; use it as a broth base for soups; as a replacement for water in preparing grain dishes like quinoa, millet and brown rice; or mixed in with steamed or sautéed vegetables.

Simple Savory Miso Broth
Prep Time: 10 minutes | Cook Time: 20 minutes | Yields: 6-8 servings
Ingredients
4 pieces of kombu (sea vegetable)
1/4 cup tamari
2 tbsp white miso paste
1 cup shiitake mushrooms, sliced
2 green onions, chopped
Directions
Place large sauce pain on a low-medium heat and bring 8 cups of water to a gentle simmer. Add kombu and tamari, stir gently as kombu expands.
Once kombu has expanded, add miso paste; stir well until miso paste dissolves. Add mushrooms and green onions. Cover soup pot and very gently simmer for 10 minutes.
Remove from heat. Use tongs to remove and discard kombu.
Pour soup into a high speed blender. Begin to blend, starting at a low speed and slowly increase it to a medium and then high speed for a total of 15-20 seconds ,or until your soup reaches a thin and even broth-like consistency.
Store in the fridge for up to one week or in the freezer for up to 6 months.
