Avocados may be in season year-round, but guacamole (if you ask me) is a quintessential summer dish. 

This isn’t just any guac recipe - it’s a loaded one, made with avocados (duh), red onions, fresh corn, cilantro, jalapeños, a splash of lime juice and dusted with a bit of cayenne for an extra kick.

My favorite part about a loaded guac isn’t how easy it is to throw together (though I do love that part, too), but how beautiful it looks when it’s all said and done, making it the perfect dish for all your summer bbq and holiday celebrations. 

Some tips before you get started:

1. Make sure the avocados are ripe - it kills the whole vibe if you use an avocado before it’s ready.

2. Use fresh ingredients as opposed to dry. Fresh garlic and onions, for instance, taste way better than the powdered varieties.

3. Don’t skip out on the salt. You can include all the vegetables and spices in the world, but salt makes all the difference between a flavorful and bland guacamole.

4. Mash the avocado first, before you add in the vegetables (otherwise the vegetables will get mushy and the guac won’t have texture).

5. Use a bit of lime juice to soften the avocado while mashing, if needed.

If you’re not into spice, leave out the jalapeños and cayenne (swap these for diced green pepper and a dusting of smoked paprika to get the same look). 

And if you don’t have some of these ingredients on hand, don’t be afraid to play around with what you’ve got in the fridge; red peppers, plant-based cheese, diced tomatoes are all great additions to a dish like this.

Best-ever Loaded Guacamole

Ingredients:

  • 2-3 large and ripe avocados

  • 1 lime, juiced

  • 1 garlic clove, minced

  • 1 jalapeño, seeds removed and diced

  • 1/4 red onion, diced

  • 1 fresh corn (remove corn from cob)

  • handful of fresh cilantro, chopped

  • 1 tsp salt

  • 1/4 tsp black pepper

  • pinch of cayenne (optional)

Directions

  • Add avocado and a bit of lime juice to a large bowl and mash until somewhat smooth but chunks of avocado remain.

  • Add remaining ingredients and mix gently until evenly combined.

  • garnish with additional cilantro and optional cayenne.

  • Serve immediately.
