Healing autumn root vegetable juice
Delicious, light, healing autumn root vegetable juice - the perfect accessory to cold and flu season!
It’s been a minute since I whipped up a juice for myself.
When my son came home with a cold from school last week (for what feels like the 45th time this year), my instinct was to whip up an antioxidant-rich, immune-boosting juice the entire family could sip on.
Made with seasonal autumn produce, like carrots, beets and pears, and immune-boosting turmeric and ginger, this juice is delicious, sweet and the perfect accessory for cold and flu season.
From a health perspective, here’s what I love about it -
-Beets are packed with essential vitamins, minerals and nutrients. They’re a great source of fiber, folate, iron and vitamin C. They’re also a good source of natural sugars, which can help increase your energy if you’re feeling sick and lethargic.
-Carrots are also loaded with helpful nutrients, but one especially great feature is that they’re packed full of beta-carotene. Your body converts this to Vitamin A, which signals the body create more white blood cells - and this helps your body fight off inflection.
-I chose to include celery, as opposed to cucumber, which gives the juice a bit of volume and because it can help fight infections due to its antimicrobial properties which can boost the immune system.
-I know an apple a day keeps the doctor away, but pears are in season too now and have important health benefits. Specifically, they’re believed to work as an anti-inflammatory in the respiratory system. They maintain moisture in the lungs and help eliminate phlegm and bacteria as well.
-Ginger can help you deal with a myriad of illnesses and disorders. In this case, it’s believed to have anti-inflammatory properties similar to those of non-steroidal anti-inflammatory drugs, which can make it a helpful remedy during cold and flu season.
-Turmeric is another helpful ingredient; helping to increase mucus production in the body, which naturally flushes out microbes that clog your respiratory tract. While it’s antiviral and antibacterial properties can help fight infection, its anti-inflammatory property helps in relieving the symptoms of cough and cold.
As you can see, this autumn root vegetable juice isn’t just beautiful and delicious - it’s also pretty ideal for when you’re feeling run down or sick during the fall and winter months.

Healing Autumn Root Vegetable Juice
Prep Time: 10 minutes | Cook Time: 15-20 minutes | Yields: 4-6 servings
Ingredients:
3 stalks of celery
1 small pear
3 carrots
1 large beet
1 lemon
2 inch knob of fresh ginger root
2 inch knob of fresh turmeric root
Directions
Remove peels from ingredients such as lemon, ginger and turmeric and roughly chop all ingredients to ensure they fit through your juicer’s feeder.
Put each ingredient through the feeder, alternating between moisture rich ingredients (such as celery, pear and lemon) and non-moisture rich ingredients (turmeric and ginger). The last ingredient used should be moisture rich, to help push the fruits and vegetables that are tougher to juice through the blade.
