If you love garlic, you can add more cloves or increase the amount of minced garlic in the dish. Taste as you go and adjust accordingly.
Toast the nutty seed crumbs: Toasting the nutty seed crumbs in a pan for a minute before adding them to the dish can enhance their flavor and add a crunchy texture. Be sure to keep an eye on them, as they can burn quickly.
Grain-free optional. You can leave out the bread crumbs for an entirely grain-free meal.
Experiment with seed varieties: The “nutty” seed crumbs can be customized by experimenting with different types of seeds. You can try using pumpkin seeds, sesame seeds, or even chopped nuts like almonds or walnuts to add different flavors and textures to the dish.

Lemon Garlic Zucchini Noodles with Seeded “Bread Crumbs”
Prep Time: 10 minutes | Cook Time: 5 minutes Yields: 2 servings
Ingredients:
(For zucchini pasta):
1 tsp extra virgin olive oil (or a splash of vegetable broth)
2 large zucchinis, spiralized into noodles
2 garlic gloves, minced
1 lemon, zest and juice
1/2 tsp dried oregano
Salt, to taste
(For the nutty seed crumbs)
4 tbsp sunflower seeds
2 tbsp ground flax seeds
3 tbsp hemp seeds
3 tbsp chia seeds
3 tbsp nutritional yeast
1 tsp celtic salt
1/4 tsp ground turmeric powder
1-2 tbsp gluten-free bread crumbs
Directions
Spiralize your zucchini using a spiralizer or vegetable peeler. Place zucchini noodles into a large bowl and set aside.
Prepare your nutty seed crumbs. Combine all ingredients (except bread crumbs) into a food processor and pulse until you reach a parmesan-like consistency.
Toast your nutty seed crumbs. Transfer nutty seed crumbs to a medium frying pan over a low to medium heat. “Toast” seeds for 1-2 minutes, then remove from pan (transfer to small bowl or air tight container) being careful not to burn them.
Cook your noodles. In the same frying pan used for toasting the seeds, heat a little bit of olive oil over medium heat. Add garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic. Add the zucchini noodles and oregano, and toss them with the garlic and olive oil. Cook for 3-4 minutes until the zucchini noodles are just tender but still have a slight crunch. Be careful not to overcook them, as they can turn mushy quickly. Remove from heat and stir in the lemon juice and zest. Season with salt to taste.
Serve. Transfer the lemon garlic zucchini noodles to a bowl. Sprinkle the nutty seed crumbs generously over the top of the noodles, adding a lovely crunch and nutty flavor to the dish. You can also garnish with additional lemon zest and chopped fresh herbs, such as parsley or basil, for added freshness and color.
